53-501.16(A)(1) Maintain TCS food at 135 F or above./ Variety chicken wings and prok riblets holding 1 hour on the right-hand side (operations area) of the wing bar measuring 113F-131F were reheated and the heating elements were turned on. The identified portion of the wing bar had not been switched on when the food was loaded to hold for service: ensure that holding equipment is turned on, properly set, and preheated before loading with cooked or heated food.
14-601.11(C) Keep nonfood contact surfaces of equipment free of an accumulation of dust, dirt, food residue, and other debris./ The steam wells on the wing bar are very heavily soiled.
45-202-12 Provide water at a temperature of at least 100 F through a mixing valve or combination faucet at handwashing sinks./ Water temperature at the handsink on the cook line beside the food prep sink measured maximum 79F.
