53-501.16(A)(1) Maintain TCS food at 135 F or above./// Grill chicken (115F) in the hot holding unit underneath the hot dog roller. Upon discovery found out that the heating element was turned down on low. --COS, PIC reheated grill chicken to 165F on the grill and then transferred back to hot holding.
53-501.16 (A)(2) Maintain TCS food at 41 F or below./// Shredded lettuce (46F-50F) and bucket of tomatoes (44F) in the RI make table cooler across from the grill area. Ambient temperature of both make table coolers (39-40F). Employee stated that it was prepared this morning and it wasn't cooled before putting in the make table cooler.-- COS, employee move items to the cooler to regain temperature. Suggested to the PIC about using time as a control for those items.
14-602.12 Clean interiors and door seals of microwaves at least every 24 hours./// Both microwaves are soiled with food residue (ice cream area and in the main kitchen) 4-601.11(C) Keep nonfood contact surfaces of equipment (interiors of refrigeration units and cooking equipment, exteriors of equipment, storage shelves, etc.) free of an accumulation of dust, dirt, food residue, and other debris. /// Shelving the WI cooler, freezer and dry storage needs to be repaired or replaced. Shelving has rusted out very badily.
13-304.14. 4-501.114 Provide quaternary ammonia solution at concentration specified by manufacturer for storing cloths used to wipe counters and equipment./// Sanitizer bucket for QA tested negative. The bulk at the 3 compartment sink is dispensing at low to zero concentration. PIC states the company that services the sanitizer is coming out tomorrow.
