53-501.19(B)(1) Ensure that the temperature of TCS food is 41 or less when removing from cold holding and 135 or higher when removed from hot holding. 3-501.16 (A)(2) Maintain TCS food at 41 F or below. // On make line the following items were out of temperature: (1) shredded cheese, (2) Sour cream, (3) potato salad, (4) cole slaw, (5) chopped tomatoes, and (6) diced watermelon (47F - 49F). To-go containers of coleslaw and potato salad in RI cooler on back make line (46F - 48F) and salad dressings on side make table cooler (52F - 55F) were out of temperature. All items were prepped this morning within past 2 hours. They were all moved to WI cooler for rapid cooling and also ice baths were added to each make table line.
