53-501.16 (A)(2) Maintain TCS food at 41 F or below./ Continuing violation of Official Notice #2S55003341 issued 14 NOV 2019 for compliance forthwith: hard-cooked eggs measuring 56F, holding on the buffet >2 hours in a chiller dispenser with melted ice were voluntarily discarded at conclusion of service. Ensure that foodhandlers are trained how to set-up cold holding equipment, and that equipment is properly set-up to hold food at 41F<.
53-304.11; 4-702.11 Prevent the contact of food with non-food contact surfaces or with food contact surfaces that are not properly cleaned and sanitized; and, sanitize all utensils and food contact surfaces after cleaning and before use./ The 3-compartment sink was relocated from the warewashing and storage room on the 2nd floor to the remodeled and expanded work room at the breakfast area; the sink is not connected to drain to the sewerage system and the establishment does not have warewashing equipment functioning for cleaning and sanitizing of repeat-use utensils and equipment.
