5 3-501.19(B)(4) Discard TCS food under time as a control that is in unmarked containers if the time that the food was removed from temperature control cannot otherwise be identified./ Sushi rice, on 4-hour time control, in a container not marked to indicate the 4-hour use limit was voluntarily discarded: maintain established procedure and mark prepared sushi rice with time for discard that is 4 hours past the time the rice is removed from temperature control at 135F>; discard the rice by the time marked.
43-501.17(A) Properly date mark all TCS food prepared in-house, when held for more than 24 hours, with the preparation date and date of discard—not to exceed 7 days including the date of preparation./ Multiple containers of prepared TCS foods found stored in refrigeration units with no date marks were labeled with the dates of their preparation during the inspection.
