4JCDH 2.2 Provide food safety training for all food handlers as required./// Eleven people employed longer than 21 days either had an expired card or no card at all. (Facility has 10 new hires, three of which are dishwashers.)
53-501.16 (A)(2) Maintain TCS food at 41 F or below./// Ham 48F, slice tomatoes 46F, white cheddar sauce 47F-48F and cut melons 47F stored in the make table cooler on the left hand side. Ambient temperature 47F.--COS, PIC discarded items and moved all other items and TCS items prepared today to another make table cooler. Do not use this cooler to store TCS foods until it has been serviced and can maintain a temperature of 41F or below.
54-501.114, 4-703.11 Provide a chemical sanitizer used in mechanical ware washing equipment as specified by in 7-204.11. / Repair dish machine and wash, rinse and sanitize in 3-compartment sink until repair is verified by JCDH. (Corrective Action)/// Facility is out of sanitizer for the dish machine, but was still using the dish machine. Discussed with PIC to use the 3 compartment sink to W-R-S dishes.
