22-401.11 Store employee food and personal drinks in a designated area below and away from food, utensils, equipment, linens, and unwrapped single service/single use articles./// Personal drink is stored in the RI freezer next to the fryers with food for business and a personal cup with liquid is stored on the clean rack shelf with dishes in the warewashing area.
53-501.16(A)(1) Maintain TCS food at 135 F or above./// Fried shrimp (109F) sitting under heat lamp on the counter was out of temperature. Suggested to the PIC to consider using time as a control for fried foods. Employees served the shrimp before speaking to the PIC about it. Shrimp was recently placed under the heat lamp.
53-501.16 (A)(2) Maintain TCS food at 41 F or below./// Coleslaw (45F) in the make table cooler, crawfish (43F) in the RI cooler and cupped coleslaw (47F) in the cooler drawers (ambient temperature of the cooler drawer 52F) all on the line was out of temperature. Raw shrimp and fish (43F-45F) in the drawers underneath the grill area out of temperature.--COS, PIC put all others on ice. Removed the cupped coleslaw and set in a clear container with ice. Instructed the PIC not to use the cooler drawers across from the fryers until it has been repaired and can maintain 41F or below.
13-501.13 (E) Remove ROP packaged fish from package prior to thawing under refrigeration or immediately after thawing under running water./// Several packages of fish were thawing in the RI cooler (the seal was not broken)
13-305.12 Cease the storage of food under open stairwells, unshielded sewer lines, leaking water lines or under lines with dripping condensate or under other sources of contamination. /// Several pans of rice was stored underneath the lines to the cooler fan box uncovered (preventive) no contamination has occurred.
13-304.12 Provide a utensil with a handle for serving or dispensing food or ice./// Bowls are used as scoops for the seasonings on the shelf above the prep sink.
