53-501.16 (A)(2) Maintain TCS food at 41 F or below./// Lettuce (51F) and tomatoes (47F) stored on the line were out of temperature. COS. The tomatoes were in the cooler for several hours-- discarded. The lettuce was recently sliced-- moved to the WI cooler to regain temperature.
44-501.116 Use appropriate chemical test kits to accurately determine the concentration of the sanitizing solution./// Facility is using quaternary ammonia; however, they do not have any test strips on-site. COS. Facility has bleach and chlorine test strips on-site. PIC stated that they will now use this as their sanitizer.
14-602.13 Clean non-food contact surfaces of equipment as often as necessary to prevent accumulation of residue./// Accumulation of debris on the interior and exterior surfaces of the deli case coolers. Dust accumulation on the backside of the menu boards that hang above the serving line. Accumulation of slime and mold on the exterior surfaces of the ice chute on the fountain drink machine.
14-202.16 Provide smooth, easily cleanable nonfood contact surfaces./// The gaskets on the make table cooler and the RI freezer are damaged. 4-501.11(B) Maintain components such as equipment doors, gaskets, etc., in good condition./// The magnet on the bread oven door is worn-- facility is using a string to keep the door closed.
