14-601.11(C) Keep nonfood contact surfaces of equipment (interiors of refrigeration units and cooking equipment, exteriors of equipment, storage shelves, etc.) free of an accumulation of dust, dirt, food residue, and other debris. / The storage shelves, and storage drawers, and the refrigeration shelves needed to be cleaned.
14-501.11 Maintain dishwashing equipment in a state of good repair and condition to allow for intended operation. (ex: broken release valve or no stoppers, missing baffle curtain on dishwasher, etc.)/ There were two water leaks at the top of the mechanical dish machine. During a wash and rinse cycle alot of water would discharge, and collect on top of the mechanical dish washer. There was a lot of water beside the mechanical dishmachine, and the wall.
46-301.11 Provide a supply of hand cleaning liquid, powder or bar soap at each handwashing sink or group of 2 adjacent handwashing sinks. /6-301.12 Provide paper towels or a continuous towel system that supplies the user with a clean towel at each handwashing sink or group of adjacent sinks./ The front bakery kitchen hand sink did not have soap or paper towels that were available for hand washing./ COS soap and paper towels were supplied during the inspection.
15-205.15(B) Repair condensate leak in refrigeration units. / The bakery WI cooler was leaking a liquid from a pipe along the wall. The liquid was running down the wall, and accummulating on the floor.
26-501.12 Clean facilities (floors, walls, ceilings, ceiling/wall vent covers, fixtures, etc.) as often as necessary to maintain cleanliness./ The bakery kitchen floors were very soiled below equipment, and along the walls. There was condensation build up on the floor in the large bakery/deli WI freezer. Several ceiling vents in the bakery kitchen were dusty. There was liquid on the floor in the bakery WI cooler, and beside the mechanical dishmachine and the wall.
16-403.11(A) Locate employee break areas so that food, equipment, utensils, linens, and single service/single use articles are protected./ In the bakery kitchen, there was a personal employee coat stored on the unwrapped cardboard cake plates. There were coats stored on equipment below the prep table. There was a coat stored on containers. / COS During the inspection, the personal coats were removed from the equipment, and single service items.
