44-501.116 Use appropriate chemical test kits to accurately determine the concentration of the sanitizing solution. 4-601.11(A) Clean equipment, food contact surfaces and utensils to sight and touch. (Interior of ice machine, ice bins, beverage nozzles, utensils in storage, etc.) Accumulation of grime and residue on ice scoop and on fork used for the pickled pigs feet.
14-601.11(C) Keep nonfood contact surfaces of equipment (interiors of refrigeration units and cooking equipment, exteriors of equipment, storage shelves, etc.) free of an accumulation of dust, dirt, food residue, and other debris. Accumulation of ice and grime on the side of the RI ice cream display freezer. 4-602.12 Clean interiors and door seals of microwaves at least every 24 hours. Accumulation of caked on grime and residue on the inside of the microwave oven. 4-602.13 Clean non-food contact surfaces of equipment as often as necessary to prevent accumulation of residue. 46-301.12 Provide paper towels or a continuous towel system that supplies the user with a clean towel at each handwashing sink or group of adjacent sinks. 6-301.12 Provide a heated-air hand-drying device or a hand-drying device that employs an air-knife system that delivers high velocity, pressurized air at ambient temperatures at each handwashing sink or group of adjacent sinks. Blower inside of the male restroom is out of order.
