13-501.15 (B) Place cooling food on top shelf of cooler in a protected location (not under the unit or drain lines). BBQ pork butts cooling on the speed rack, below other (TCS) food.
13-304.12 Provide a clean and sanitized surface in a protected location for storing utensils such as an ice scoop that only contact non-TCS food. The ice scoops are stored in a pan with other utensils and equipment. The pan is not clean.
14-204.112 Provide appropriate, readily accessible thermometers for all make tables, coolers and hot holding units. Thermometers are not provided inside the RI prep coolers.
13-304.14 Store wet wiping cloths in the appropriate sanitizing solution when they are between uses. Towels were never introtduced to the sanitizer during the course of the inspection.
14-901.11 Allow utensils to air dry before stacking. Wet stacking of clean pans stored on the drying racks.
15-205.15(B) Maintain plumbing in good repair. The faucets leak, (warewashing sink).
