14-601.11(C) Keep nonfood contact surfaces of equipment free of an accumulation of dust, dirt, food residue, and other debris./ The exterior of the soft-serve dessert freezer and the adjacent CO2 tank and tubing are very dusty and dirty; the storage bin for the soft-serve cleaning tools needs to be cleaned. Underside of the shelf over the buffet warmer is heavily soiled with food residues and particles.
14-204.112 Provide appropriate, readily accessible thermometers for all cold holding units./ Missing thermometer in the refrigerated mix hopper compartment of the soft-serve freezer was replaced during the inspection.
15-205.15(B) Maintain plumbing in good repair./ Reinstall the drain line on the ice machine and properly route the line to discharge into the drain under the machine; repair the loose handsink faucet in the mens restroom.
26-501.12 Clean facilities walls, ceilings, and fixtures as often as necessary to maintain cleanliness./ Dust build up on the suspension chains of the ceiling-suspended single-service article dispensersthroughout the beverage and dessert preparation areas. Dust on walls, ceiling, and ceiling vent at the soft-serve freezer.
