52-301.14 Wash hands for at least 15 seconds after any potential contamination (i.e. handling soiled utensils, after using toilet room, before donning gloves, etc.). The food handler at the slicing station was observed going to his drink cup & to his cell phone, then proceed to handle (R-T-E) food, while wearing the same pair of gloves.
22-401.11 Store employee food and personal drinks in a designated area below and away from food, utensils, equipment, linens, and unwrapped single service/single use articles. Unapporoved personal drink is being stored on the slicer, then on the rack directly over the prep table.
53-501.14(A) Cool temperature control sensitive (TCS) food from 135F to 41F or lower within 6 hours, and from 135F to 70F or below within the first 2 hours of cooling time. Internal temperature of the shredded chicken cooling overnight in 6 inch deep (covered) container, is reading 45F in the center.
13-304.14. 4-501.114 Provide quaternary ammonia solution at concentration specified by manufacturer for storing cloths used to wipe counters and equipment. Sanitizer for the wiping cloths is not set up. (cos).
14-903.11 Store single service and single-use articles at least 6 inches above the floor. Boxes of styrofoam cups are stored on the floor in the walkway.
26-501.11 Maintain physical facilities in good repair (floors, walls, ceilings, ceiling tiles, attached fixtures, etc.). The screen on the delivery door is in bad repair.
