52-301.14 Discard gloves/wash hands properly at station after any potential contamination./ Grill cook loaded raw ground beef patties onto the grill with gloved hands, and without discarding the gloves touched surfaces, handled utensils, and prepared to scoop ice from the machine: the employee was interrupted and directed to discard the gloves and wash hands properly at the handsink; the cross-contaminated surfaces and utensil handles were cleaned and sanitized.
53-501.19(B)(4) Discard TCS food under time as a control that is in unmarked containers if the time that the food was removed from temperature control cannot otherwise be identified./ Variety sliced and shredded dairy cheeses holding on the make line without time control labels (temperatures measured 53F-65F) were voluntarily discarded: maintain established procedure and mark all containers of TCS foods on the make line (ex: dairy cheeses; cut lettuce & tomatoes) with the time for discard that is 4 hours past the time the food is removed from refrigeration at 41F<.
